Sweet Potato with Houmous (MICROWAVE)




  1. Clean the sweet potato well and cut off the knarly end bits; prick the skin with a fork or knife.
  2. Put the sweet potato in a bowl along with a glass of water. If the glass of water won't fit in the bowl, it can sit next to it.
  3. Cook the sweet potato, along with the glass of water, in the microwave on full power for 5 minutes.
  4. While the sweet potato is cooking make the houmous, as follows.
  5. Peel the lemon and put the segments into a bowl along with the chickpeas, garlic and parsley.
  6. Blend until smooth.
  7. Stir in the seeds.
  8. When the sweet potato has had 5 minutes, stick a fork into it to check that it's cooked; it should be soft and easy to stick the fork into. If not then turn it over and cook for another 3 or 4 minutes.
  9. When the sweet potato is done, serve with the houmous.
